Our veggie garden is coming along so nicely - although we still have to get a handle on this crop rotation business ;-) Today we harvested a lovely bunch of spinach. We are having beef stew with rice and creamed spinach for dinner tonight. Yum!

1 medium potato
1 bunch spinach
½ tsp salt, ¼ tsp pepper
1Tbl butter
clove garlic
30ml cream
¼ cup cheddar
pinch cayenne pepper

Cut a cross in the potato and microwave on high for 4 – 5 mins until done. Shred spinach and place in a dish with 30ml water. Microwave on high for 5 mins. Transfer spinach to a food processor add skinned potato, seasoning, garlic and cream and process until smooth. Sprinkle with cheese and cayenne pepper.
